TBM? Nah,.... TBT!

The classic Tomato-Basil-Mozzarella acronym is everywhere.  It's a simple, somewhat healthy concoction that takes seconds to construct.  But the mozzarella is so, ugh.... anti-vegan.

So I thought, "Hmm, what could possibly mimic the texture and taste of freshly sliced mozzarella cheese?"  That was too easy- TOFU! Well, why haven't people thought of this before? It's so simple, cheap, and easy! Here's to the new TBM...... the protein-rich, lower calorie version: the almighty TBT.


 







TBT- Tomato Basil Tofu Sandwich

Ingredients:
2 large and firm tomatoes, sliced thin
large handful of fresh basil
crusty bread, like ciabatta or a baguette sliced length-wise
Extra firm tofu, drained
Extra Virgin Olive Oil
Salt 'n Pepa, to taste (quite a lot of freshly ground pepper is recommended)

Optional add-ons:
freshly diced garlic, garlic power, or garlic salt
Italian seasoning
oregano
red pepper flakes
drizzling of balsamic vinegar (which I kept uncorked at my side to douse my TBT with at all times)                                                                                                               look below- pr00f!


Cut the bread length wise, so that the entire loaf is in two large sheets.  Cut the "sheets" into strips the size of your sandwiches.  Sprankle the inside of each piece with a bit of olive oil,  followed by any optional spices.  Layer tofu, sprankling it with salt and pepper.  Layer tomatoes and basil, top the sandwich off with top crust,...

 
and bite in.

An Afternoon With Heather Esposito, Owner of Sweet Freedom

I recently acquired quite a sweet opportunity: to interview Heather Esposito, co-owner and founder and Sweet Freedom Bakery in Philadelphia.  Opened merely a year ago, the 100% (let me take a breath).. vegan, soy-free, nut-free, gluten-free, refined sugar- free, and corn-free store has been serving up some of the most innovative and nutritious desserts on the east coast. 
But I was personally motivated to find out more about the woman behind it all, so on a warm, sunny day a few weeks back (uh, where did that weather go?) I chatted with her while she multi-tasked around the shop, and here is what I found out..

Heather Esposito, happy to be able to prop open the door of her bakery, stared down South Street at the traffic zooming past on Broad.  Noon of the first balmy day of the year was underway, beckoning many visitors into Sweet Freedom, including the usual donut and coffee-hounding policemen.   But Sweet Freedom is the only gluten-free, refined-sugar free, corn, soy, and peanut-free bakery on the east coast- worlds different than your average Dunkin‘ Donuts.  Busy packing and shipping order upon order of her delectable, danger-free treats to allergy-prone customers around the nation, she  found time to get out a bowl of greens, apples and bananas to add to her VitaMix blender.  “Sorry, just making my daily green smoothie,” she said, running from counter to blender to oven in her web-toed shoes reminiscent of Californian, granola-snacking kayakers.
    Opening merely a year ago, the concept of Sweet Freedom Bakery was born when Heather Esposito and Allison Lubert, fellow students at Integrative Nutrition in Manhattan, started talking about wanting to do it.   “Allison and I just kept talking and talking about it and we were like, ‘let’s do it!’  And then, we did it.”  Building off a small storefront off Broad st. in the heart of Philadelphia, the dynamic duo gained national recognition for supplying the growing population of those inhibited from desserts by allergies.  Though the original plan was to create a gluten-free safe haven for those suffering from Celiacs sufferers,  Esposito’s background in Health Counseling brought her to clients with other allergies that she wanted to include as well.  “I really started wanting to open up a bakery that was gluten-free and refined sugar-free.  It made sense to be vegan because most people that have celiacs are allergic to dairy and eggs.  And then I had a client who was allergic to soy and most things that are vegan have soy all over the place and so I didn’t want to do soy.  Then I had another client that was allergic to corn.”
    Though both these determined ladies had a hand in the process of opening the storefront, Esposito’s past has been directing her toward this business venture all along.  Now the source of meaning in her life, Esposito has learned that her bakery is much more than a menagerie of tasty delights, both to her and her customers.

    As she scooped the holes out of cupcakes and filled them with either raspberry or apricot preserves, she talked about her personal struggle with her own diet.  “ I did have a lot of dietary issues.”  But young Esposito didn’t start paying attention to how much diet could impact a person until she was diagnosed with hypoglycemia her junior year in high school.  “After I was diagnosed, I was still eating really crappy, but my mom read that the Atkins diet, which was popular at the time, was really good for people with hypoglycemia or diabetes, so I did that and changed-  I was so much less irritable, much more pleasant, and had much more energy, etcetera.”  Though she found a better way of eating, she still wasn’t consuming good quality foods through high school and college.
    After receiving her Master’s in counseling, Esposito started working at a group home for bipolar and mentally ill teenage girls.  “It was kind of like my personal journey and my professional journey coincided,”  she explained.  She started to pay attention to the girls’ perilous routines: they would get up, eat pop tarts, and then go to school and eat a typical school lunch like french fries and pizza, then come home and they have a “fruit snack” while watching t.v.


    After her time there, Esposito’s spirit slowly drained as the holiday season rolled around.  She accredits a lot of the stress to the excessive holiday sweets she binged on.  “I was in this Limbo stage and I just got in this funk where I was so depressed that I was like, I’m gonna kill myself.  I thought about 15 different ways I could do it,”  said Heather.  So she thought, maybe it’s the sugar, just maybe.  “So I gave it a week; if I still felt like it, I’d go for it.  But, ya know, maybe there’s something here.” 
    Heather cut back on refined sugars for one of the most influential weeks of her life, and surprisingly, her mood skyrocketed.   She thought, “Okay, I think there’s really something here.”
    So after seeking information in a nutrition class at a local night school, she was inspired.  As she drove home with a brochure on her lap about Integrative Nutrition, a nutritional counseling program, Esposito came to a realization.  “It combined the counseling tools that I had already had with food stuff that started seeming so much more important that counseling cause if you can change someone’s diet in 3 weeks, you can change their disposition.”  So she signed up for Integrative Nutrition, left for Manhattan, and struck a whole new chord within herself.  While turning her life upside down, she also met one of the most important people in her life at the culinary school, her current business partner, Allison Lombart.

    With her new training, Heather started doing health counseling as well as cooking classes, “Which now I look back on and laugh because I had no idea what I was doing,” muses Esposito.  But she didn’t let that stop her from soaking up the nutritional world like a sponge.  She decided to go to the prestigious Natural Gourmet, a culinary school in Manhattan, “... because even if I never use it professionally, I figured I’m gonna eat for the rest of my life so I might as well learn how to cook.” 
    Despite her woes, Esposito graduated with a culinary degree and started practicing being a private chef, teaching cooking classes, and still doing health counseling.  “I was doing a lot of different jobs cause in this field you have to bust your butt to make a little bit of money.  It’s a lot of work.”  But by this time, Heather knew in her heart what she really wanted: to open a gluten-free, refined-sugar free bakery so all her clients could finally eat desserts.  But surely, people had doubts about her dreams.
    “My friend’s husband said ‘You’re totally narrowing your market, you’re making it too small,’  but no, actually were actually opening it up because our stuff is gonna be good enough that anybody will like it but also safe enough for people with 101 allergies to be able to come,” respited a determined Esposito.  And while she experimented with her everything-free desserts in the kitchen, some things came out good, while others, “well, we all knew they were terrible,” she laughed.  But her and Allison eventually got serious and moved into the storefront on South and Broad.
    With the success of their storefront came unexpected media coverage.  When asked whether or not she felt recognizable in the Philadelphia area, Esposito responded, “No, no, no.  But I think I’ve realized how much of a private person that I am. I love doing behind-the-scenes stuff.”  And it’s easy to tell, as she runs around the bakery, coating donuts in cinnamon sugar and packaging packages of cookies to ship to around the continent while remaining carefully pensive over the interview questions. 

    Esposito explains, “I mean, for Cupcake Wars, Ally was our spokesperson.  But the one time I was walking down the street and someone came up to me and said, “Hey, you’re the owner of Sweet Freedom!”  I didn’t know what to say.  I’m much more of an introvert than that so for me it’s awkward and weird,” Esposito said humbly.  “Cause I’m like, I didn’t do anything that anybody else couldn’t have done, I just did it.”
    Although Sweet Freedom serves as a haven to the community, Esposito’s mission is nation-wide, “I mean, sugar is still sugar is still sugar, you know, and desserts are still desserts, unfortunately America is not going to change and go to a plant-based diet, and never eat sweets again, so if we can provide them with something better, I think we’re doing a good job.”

Post-Vday Lovin': In a Bowl

This new cereal, Love Crunch Granola from Nature's Path Organic, is full of good stuff: strawberries, raspberries, dark chocolate, and coconut over flax granola.  (Sounds just like my Valentine's Day Raw White Chocolate Dark Chocolate Raspberry Tart!)
The difference is: you can eat this for breakfast.  Not only is it allowable, but it is expected.  And the story behind it is sappy-sweet as well. 
A couple created this recipe as a wedding favor and gave it to their guests.  Though they are living happily ever after with their product hitting Whole Foods and Wegman's shelves, the Love Crunch recipe will only be around for a limited time, so stock up now.

The Loving Hut: South Street Enigma

I recently did a piece for Philly Broadcaster on the mysterious, but nationally revered founder of the Loving Hut vegan "fast food" restaurant chain: The Supreme Master Ching Hai.  The Loving Hut has sprouted from merely 1 storefront to hundreds of locations worldwide in only 2 years.  After reading an article about this enigmatic Vietnamese chain in VegNews Magazine, (which awarded the restaurant the 2010 Veggie Awards for Reader's Choice Favorite Restaurant) I was truly intrigued. 

This intrigue led to to the Loving Hut Worldwide Website (Prestige Worldwide-wide-wide-wide), which informed me that the first location on the east coast would be.... dun dun dunnn.... on SOUTH ST. IN PHILLY!  So after taking a few visits since it's opening in August, it has become quite an awesome but strange place in my mind.  Undoubtedly, not many people know about this place due to such a non-glamorous storefront.  But their taro bubble tea, sushi, and sandwiches are worth finding.  Read the article to learn mo' bout it.

A Cake for Your Valentine: Two-Way(s)

Wink, wink...

For Valentine's Day, my roomies and I held a lil' pre-Vday Sunday brunch which was themed "No Boys Allowed."  Therefore, we took the opportunity to roll out of bed and eat as many sweets and drink as much exotic tea as possible without the insecurities of prowling man eyes.  And a feast, it was.

Though many dairy and icing-laden cakes and cookies were present, I still repped the veg baking world by making a delicious Strawberry Cream Cheeze Cake with Chocolate Ganache.



But the richest dessert, I saved for my valentine: a TOTALLY Raw White Chocolate Dark Chocolate Raspberry Tart!  After searching for recipe among recipe, I settled on this raw gem, because it was comprised of some of the most voluptuous aphrodisiacs knows to man.

Soaked almonds made the yellow (surprisingly buttery-looking) crust.  Almonds supply a generous dose of Vitamin E, which obviously "moisturizes" the skin... every part of the skin (more winks.)  The omega-fatty acids and oils that are good for a total-body complexion are also full of antioxidants which reverse free-radical damage.  Because of all the "total body workouts" going down on V-day, almonds are good to eat after this sensual activity.  Why?  Because over-working your body actually causes it to release a greater amount of these toxic free-radicals.  This doesn't mean to stop "working out," however, eating almonds will help ease the stress on the bod that otherwise would take longer to neutralize and repair on it's own.  And after being soaked, the nutrients in nuts are increased, further stimulating, well,... further stimulating "stimulation."

Now raspberries; just look at a raspberry sometime and tell me it doesn't have a sexy shape.  Besides the lustful plumpness and soft ridges of raspberries, they provide tons of Vitamin C and antioxidants that are sure to get your body lively and ready for action.

Finally, we've got chocolate.  Everybody knows chocolate is the #1 aphrodisiac (Sidenote: A recent poll revealed that most women prefer eating chocolate to having sex.) but in it's rawest form, it is quite dangerous.  Raw Cocao (not cocoa) Powder is the most concentrated source of both fire-igniting passion as well as antioxidants known to mankind.  Today, it is sold for a very high price at health food stores and Wholefoods.  Many people take it as a supplement, not just as a dessert.  But since the Mayans discovered this mystical bean, the harvesting of cocao has been used to enticed and delight people all over the planet.  However, it you don't want to get caught groping a random person and/or animal, you should probably wait to consume it until you're with someone you'd like to get down and dirty with.

Here are recipes for the cakes.  For the Strawberry Cake, I totally made up the recipe based on ingredients I had.  But the raw aphrodisiac tart was found at Rawmazing.com.  Look Below for more info.

 Strawberry Cream Cheeze Cake with Chocolate Ganache
 Materials: Cake pan (preferably heart-shaped)

Preheat oven to 350 degrees.  Grease pan with vegan margarine or canola oil spray.

 Ingredients for cake:
4 cups flour
2 1/2 cups raw sugar
tablespoon baking powder
teaspoon vanilla extract
shake of salt
1/2 teaspoon cinnamon
1/4 cup canola oil
1 overly ripe (brown-spotted) banana, mashed
1/4 cup strawberry preserves (try to get corn or high fructose syrup-free)

Garnishes:
Rawmazing's Raw Chocolate Ganache
thinly sliced strawberries
slivered almonds

Pour half of batter into cake pan.  Bake for 25 minutes, or until fork can be inserted and come out clean. Pop cake out of tin and onto cooling rack after about 15 minutes.  Then pour in rest of batter and repeat.

After half an hour of cooling, cut thin layer off top of cake to make perfectly level.  Spread about 2-3 tablespoons of Tofutti Cream Cheese evenly over layer.  Then top with about 2-3 tablespoons of strawberry preserves.  Layer very thinly sliced strawberries in single-file row over preserve/tofu cream cheese layers.


After second cake pops out, let cool for same amounts of time and slice thin layer off top to make perfectly level.  Coat bottom (uncut) side 2-3 more tablespoons of toffuti and preserves, then gently place on top of strawberry-coated layer, creating a goowgeouus filling.  Then, coat entire top of cake with raw chocolate ganache.


Layer freakishly thin slices of strawberries on top of ganache in any pattern you desire.  It is best to thinly cut the same-sized strawberries and exclusively use the middle 3 layers so that they are all equally-shaped.  Then coat any exposed chocolate ganache with slivered almonds.  Refrigerate for a few hours before serving.  Share with your lady friends!

Fridge Feast: A Faux-Chicken Salad made with Ordinary Ingredients

Yesterday, I came back from a day chock full of classes with a ravenous appetite.  After searching my cabinets inside and out, I realized my blood sugar was so low I needed to pop something in my mouth; immediately.  So without much preparation, I made a simple but satiating and delicious fauxx chicken salad.


Combining the sweet, crunchy element of half a leftover fuji apple, a few spoonfuls of leftover buffalo hummus, a diced slice of half a red onion, a squeeze of lemon, and Gardein's faux breaded chicken strips, I had a bangin' lunch in no time.  There are countless ways of preparing a nice salad, so I'll give you options along with the recipe of ingredients I happened to have in my fridge.  The only solid ingredient you really need is faux chicken strips; Gardein is delicious and won VegNews' Veggie Awards for best product of 2010!  They're also available in most supermarkets; they're not exclusive to health food stores.

I-found-all-this-crap-in-my-fridge faux chikin salad
(Done with what I had to work with at the exact date and time= BUFFALO STYLE )
3-5 strips Gardein Breaded Crispy Tenders (or any other faux chicken, tempeh, or even tofu)
2 tablespoons Bean's Buffalo Hummus (AWESOME stuff, but any hummus will do- experiment with garlic, lemony, or spicy varieties)
2 tsp. Tabasco sauce
Shake or 2 black pepper
Squeeze of fresh lemon
half-quarter large fuji apple, sloppily diced

Serve Over:
Bed of mixed greens (which I chose)
Toasted Multi-grain bread

or Serve Between:
A sesame or cinnamon raisin bagel (trust me, sweet and savory works is magical)
two slices of your favorite bread/bun


Defrost chikin strips by setting out or microwaving based on bag's instructions. In a small bowl, douse cooked strips with tabasco sauce,...









 ..smashing it all together with a spoon or fork until it is a consistent "pulled" consistency.  Add hummus, black pepper, then the lemon and mix together.  Then, add apples or anything else such as walnuts, tofu, celery, or raisins (whatever your heart desires.)  Then simply coat a plate with a heaping bed of lettuce, toast, bagel, or pita and scoop salad on top, and enjoy!

Free People Frees a few Cows

Free People, one of the chicest chain boutiques in the country, is one of my favorite places to find outfit inspiration.  However, I so don't agree with their countless leather products (as well as their steep price tags.)  It seems as though every bracelet, boot, headband, and even shirt has the ability to find a way to sneak leather into the product.
 
But when I typed "vegan" into the searchbar on the website today, up popped a pair of "leather" pants! Wow- a pair of vegan leather pants from free peeps!

So here they are in all their glory-






















I'm not one to wear much fauz leather as it is, although I do love my black pleather jacket from Charlotte Rusee. 

There's just something thrilling about wearing a leather-style jacket with tights and re lips; sans Sandy from Greece. 
Turns out, I took these feelings quite literally and decided to dress as her for Halloween last year. (hinthint: second from the left!)








But seriously girls, if you don't wanna look ridiculous in leather pants, it's really not that hard.  I honestly think they look much better with feminine accents.  Like how lena-a from Chicisimo (to the left) wears them; with heels, a flowy, feminine blouse tucked at the waist to preserve a cinched midsection, free-flowing strands, and lots of jewelry.  Minx!
