TBM? Nah,.... TBT!

The classic Tomato-Basil-Mozzarella acronym is everywhere.  It's a simple, somewhat healthy concoction that takes seconds to construct.  But the mozzarella is so, ugh.... anti-vegan.

So I thought, "Hmm, what could possibly mimic the texture and taste of freshly sliced mozzarella cheese?"  That was too easy- TOFU! Well, why haven't people thought of this before? It's so simple, cheap, and easy! Here's to the new TBM...... the protein-rich, lower calorie version: the almighty TBT.


 







TBT- Tomato Basil Tofu Sandwich

Ingredients:
2 large and firm tomatoes, sliced thin
large handful of fresh basil
crusty bread, like ciabatta or a baguette sliced length-wise
Extra firm tofu, drained
Extra Virgin Olive Oil
Salt 'n Pepa, to taste (quite a lot of freshly ground pepper is recommended)

Optional add-ons:
freshly diced garlic, garlic power, or garlic salt
Italian seasoning
oregano
red pepper flakes
drizzling of balsamic vinegar (which I kept uncorked at my side to douse my TBT with at all times)                                                                                                               look below- pr00f!


Cut the bread length wise, so that the entire loaf is in two large sheets.  Cut the "sheets" into strips the size of your sandwiches.  Sprankle the inside of each piece with a bit of olive oil,  followed by any optional spices.  Layer tofu, sprankling it with salt and pepper.  Layer tomatoes and basil, top the sandwich off with top crust,...

 
and bite in.
